Tuesday meal was Fabulous!! I substituted quinoa for the barley because I had it on hand. It also reduced the cook time significantly. The quinoa cooks in about 12 minutes as opposed to 40.
Wednesday meal was delish as well. Kids scarfed the first helpings down so quickly and asked for seconds. I served it with scalloped potatos (out of a box, i was very skeptical, but they were surprisingly really good!) Also some green beans, sauted with garlic, red onion and a little pepper.)
